Processed Cheese or cheddar cheese, grated – 1/3 cup
Potatoes boiled, and mashed –  4 medium
Corn  kernel- 1/ 2 cup
Green chillies finely chopped – 3-4
Mozarella cheese(for stuffing) -1 cup
Black pepper powder 1/2 tsp
Oregano – 1/2 tsp
Corn flour- 3 tbsp
Breadcrumbs – 1 cup
All purpose flour or maida – 2 tbsp
Coriander leaves – 1/2 cup
Salt to taste
Oil for deep frying
  • Mix together potatoes,  black pepper powder, green chillies, salt, processed cheese, corn kernels, corn flour in a bowl.
  • Take about 1 tbsp of the mixture and roll into balls. Stuff each ball with mozarella cheese and roll again.
  • In a bowl, take 2 tbsp corn flour and 2 tbsp maida and make a smooth paste adding 1/3 cup water or as needed.
  • Dip each ball in the batter n then roll them in breadcrumbs. Repeat the process for all the balls
  • Heat oil in a pan, deep fry the balls on medium flame till golden brown and crisp.
  • Drain on an absorbent paper and serve hot with a dip of your choice.

All-purpose flour (or maida) – 1 cup
Salt1 1/4 tsp
Oil – 1 tbsp
Lukewarm water – 1/3 cup
For the Filling
Potatoes (boiled, peeled and chopped) – 2large
Green peas – 1/2 cup
Cumin seeds – 1/2 tsp
Coriander powder – 1 tsp
Red chili powder – 1/4 tsp
Green chillies, finely chopped – 2 -3
Coriander leaves – 1/4 cup
Oil to Fry
For Serving
1/4 cup Mint chutney – 1/2 cup
Tamarind chutney – 1/2 cup
Making the Dough
  • Mix flour, salt, and oil. Add water as needed to make a firm dough.
  • Knead the dough for about 1 minutes to make  until the dough is smooth. Let it sit for at least 15 minutes.
Making the Filling
  • Heat the 1 tbsp oil in a frying pan on medium heat. Add cumin seeds as cumin seeds start spluttering, add green peas stir-fry for about 2 minutes.
  • Add potatoes, coriander powder, red chili powder, garam masala, salt and green chili. Stir-fry for about 2 minutes.
Making Taco Shells
  • Knead the dough for few seconds. Divide the dough into 8 equal parts, and roll them into balls.
  • Roll each dough ball into about 4-inch diameter. Prick each rolled up Taco with a fork in several places both sides, this will prevent Taco from puffing and make them crisp.
  • Heat the oil in a deep non-stick pan and deep-fry it till it turns light brown in colour from both the sides.
  • Once it turns light brown, immediately shape it into a shell (‘u’ shape) using a pair of tongs and a frying laddle and continue deep-frying while holding the shell till it turns golden brown in color from both the sides.
  • Drain it on an absorbent paper.
  • Repeat steps to make more taco shells.
  • Allow it to cool completely, store in an air-tight container and use as required.
Assembling the Tacos
  • Fill the taco shell with potato filling (filling should be hot) and drizzle with chutney.

Paneer kababs

Paneer (cottage cheese) – 30 cubes
Green bell peppers (cut into 2-inch squares) – 3
Onion (cut in 2 -inch squares) – 2
Yogurt – 1 cup
Garlic paste – 2 tbsp
Red chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 2 tsp
Cumin seeds roasted and coarsely ground – 1 tsp
Salt to taste
  • Mix yogurt with the coriander, cumin, chili and turmeric powders and garlic paste . Add salt to taste. Whisk to get a smooth paste.
  • Add the cubes of paneer to this paste and coat well. Allow to marinate for 1-2 hours.
  • On wooden barbecue skewers, alternate cubes of paneer with the onion and green bell peppers squares.
  • Grill on a barbecue or in oven or on tawa brushing with some oil, until the vegetables are soft.
  • Garnish with a squeeze of lemon and serve.

Rava Fried Prawns

Prawns /Shrimps – 10-20
Turmeric powder – 1 tsp
Red chilli powder – 1 tbsp
Pepper – 1/2 tsp
Lemon juice – 1 tbsp
Green chillies, finely chopped – 2-3
Rawa / semolina – 1 cup
Rice flour – 1 cup
Salt to taste
  • Clean the prawns, devein and wash them. Leave the tails on. Pat them dry.
  • Mix the ginger garlic, green chilies, lemon juice, turmeric, red chilli powder, salt, and pepper
  • and marinate the prawns in this mixture for three to four hours.
For frying:
  • Mix the rice flour, rawa, salt, 1/4 tsp each of turmeric powder and chilly powder in a bowl
  • Coat the prawns in this rawa and rice flour mixture. Ensure that it is fully covered with flour and rava.
  • In a pan, add oil and let it heat for 2 -5 minutes.
  • Add the prawns on the pan and fry on low flame and let them cook when it turns slightly brown flip and let the other side cook.
  • Always fry prawns on low flame and do not cover it while frying.
  • Remove the prawns from the pan and place on a tissue to absorb the extra oil.
  • Serve the prawns with lemon wedges.

  • Take bowl and add chicken, garlic paste, onion, pepper and salt in it.
  • Mix all the ingredients well. Once done, mince the mixture coarsely and refrigerate it for around 45 minutes to 1 hour
  • Now, take another bowl and beat the egg in it.Then take small portions of the minced mixture and prepare small nuggets of the same.
  • Coat these nuggets with flour and then dip into beaten egg mixture.
  • Then, coat with breadcrumbs. Repeat the process. Let it rest for 15 minutes
  • Then heat oil in a pan over medium flame. Once the oil is sufficiently hot, add nuggets and fry them for 2 mins on both side. Fry till they turn golden brown in colour.
  • Once done, transfer the nuggets over a napkin so that the excess oil is absorbed. Serve hot with ketchup or mint chutney.
